This is a 'black' rye bread, made with 100% dark wholemeal rye flour. It is similar to the traditional rye breads made in Scandinavian countries. It has a distinctive earthy, rich flavour & a chewy crust. Due to the lower gluten content of rye flour the bread rises less than other varieties & has a correspondingly dense, moist crumb structure. It is best eaten toasted. This bread does tend to be a bit of an acquired taste but those who take to it do become avid fans!
This is also a sourdough bread. This means that it contains no added yeast but is leavened by the addition of a 'starter' or 'leaven'- a mixture of bread flour & water which attracts natural yeasts from the environment & creates a gentle fermentation culture.
